Fiery Cottage-Cheese Boats (Rachael Ray) |

From Rachael Ray's magazine. These make a wonderful appetizer with a bit of a bite (little bites with a bite ). Good for parties and Superbowl! Ingredients:
1 bunch celery |
1 cup small curd cottage cheese |
2 tablespoons horseradish |
1 tablespoon pepper |
1/2 cup pecans |
Directions:
1. Toast pecans on a cookie sheet on low (325°F oven) about 7-10 minutes. Do not burn! 2. Clean celery and chop into 2 long celery sticks (24 sticks). 3. Mix cottage cheese, pepper, and horseradish together. 4. Spoon about 1 Tbsp on each celery stick. 5. Sprinkle with toasted pecans. |
