Adela Castro, Houston, TX, from when we lived in the barrio. This is kind of a Mexican soul-food version of Franco-American Spaghetti, and is used either as a side dish (good with steaks) or as a base for Mexican Sopa -type foods. Read more ... Barbecoa, BEANS, Carne Guisada, &C Ingredients:
1 5 oz. box fideos (or vermicelli) |
2 tbsp. oil |
to taste salt |
to taste black pepper |
6-8 shakes powdered comino (cumin) |
1/2 cup chopped onion (or equiv. instant minced onion) |
2-3 cup water |
1/2 8 oz. can tomato sauce |
1 to 2 tsp. chili powder (optional, recommended) |
Directions:
1. - Break vermicelli into pieces and add to oil in hot skillet. 2. - Stir-fry pasta until some of the pasta begins to turn a VERY LIGHT brown. 3. - Add tomato sauce and spices and bring to a boil. 4. - Reduce heat and SIMMER, uncovered, stirring occasionally, until cooked down to about the consistency of Franco-American Spaghetti , or slightly drier. 5. ******** Serving Suggestions ******** 6. Serve with Ham-Hock and Beans, Carne Guisada, Barbecoa, or other sopa spooned over top. 7. Can also be used as a side dish to other entrees, such as tamales, tortillas, or any other menu where Spanish Rice would be used. |
