I came up with this quick and easy dish while trying to use up leftovers and ingredients I had in the fridge and pantry! Ingredients:
500 g fettuccine pasta, cooked |
1 (440 g) can chopped tomatoes |
1 onion, diced |
1 zucchini, sliced thinly |
1 garlic clove |
1 tablespoon olive oil |
50 g mushrooms, sliced thinly |
1 teaspoon oregano |
100 g feta cheese, crumbled |
100 g cheddar cheese, shredded |
Directions:
1. Heat olive oil in a small pan. Add onion, zucchini, and oinion, and cook until tender. 2. Transfer to a large bowl, and add fettucini, tomatoes, mushrooms, and oregano. Stir gently to combine. 3. Transfer mixture to a baking dish, top with cheeses and bake at 180C for 30 minutes, or until cheese is melted and starting to browm. |
