Fettuccine with Tomato Clam Sauce |

A lighter version. Ingredients:
8 sun-dried tomatoes |
1 tablespoon olive oil |
1/2 cup onion |
2 cloves garlic |
1 can whole clam (including the juice) |
1/2 cup chicken broth |
1/2 cup tomato paste |
1/2 teaspoon dried oregano |
1/8 teaspoon red pepper flakes |
3 ounces cooked fettuccine pasta |
Directions:
1. Soak tomatoes in boiling water for 5 minutes. 2. Drain and puree. 3. Heat oil, add onion and garlic cook 5 minutes. 4. Add remaining clam juice, broth, tomato paste and spices. 5. Bring to boil and simmer 15 minutes. 6. Add clams. |
