Fettuccine With Spinach, Red Peppers and Smoked Cheese |

this is a variation on a recipe I got from 'Simple Vegetarian Pleasures' you can combine all the ingredients into one bowl at the end but I don't like that the vegetables clump together so that one person gets spinach for supper and everyone else gets plain pasta. Ingredients:
1/3 cup olive oil |
4 garlic cloves, minced |
1 red bell pepper, sliced into thin 2 inch long strips |
1 (10 ounce) package spinach |
1/2 salt |
pepper |
1 lb fettuccine |
1 cup grated smoked gruyere cheese |
Directions:
1. bring a large stock of water to a boil. 2. heat 1/4 cup of olive oil in a large skillet over medium heat. 3. saute garlic for 1 minute then add peppers and saute 7 minutes more. 4. pile on the spinach and cover the pan, cook about 3 minutes, until wilted. 5. add salt and ground pepper and keep warm. 6. when water comes to a boil add pasta and cook until tender. 7. reserve 1/4 cup of pasta water and drain remainder. 8. toss pasta with remainder of oil and stir in cheese to melt. 9. add reserved water as needed get cheese smooth. 10. to serve, put pasta on a plate and top with vegetable mixture. |
