Congo Chicken and Okra Ingredients:
4 chicken breasts, boned and skinless |
4 ounces onions, chopped |
1 teaspoon salt |
2 medium tomatoes, peeled |
2 green chili peppers, seeded |
gingerroot |
4 cups water |
12 ounces okra, sliced |
1/4 cup tomato paste |
2 cups rice, cooked (optional) |
Directions:
1. Place chicken and onion in a heavy saucepan or Dutch oven. 2. Sprinkle with salt. 3. Using the fine blade of a grinder, chop tomato, chili peppers and ginger. 4. Add mixture to chicken. 5. Pour in water and bring to boil. Reduce heat and simmer, covered, for about 20 minutes or until chicken is barely tender. 6. Add okra. 7. Stir in tomato paste. Contine simmering, uncovered, until chicken and okra are tender. 8. Place each breast on a individual dinner plate. Divide vegetable and liquid evenly and pour over chicken breast. 9. Serve over 1/2 cup rice if desired. |
