Spinach, Feta, Mushrooms, Onions, With Salsa Ingredients:
1/8 cups mushrooms, sliced |
1/8 cups onion, chopped |
1 cup spinach |
1/4 cups egg beaters |
1 tsp cumin |
1 tsp garlic |
1/4 cup reduced fat feta cheese |
2 tbsp salsa |
1 tbsp cilantro |
Directions:
1. cook veggies until tender (about 4 to 5 mintues),remove from heat and set aside. Coat the skillet in cooking spray and pour in eggs, sprinkle with cumin/garlic and allow to cook about 2 to 3 minutes. Add cheese and veggies to half of omelette. Using a spatula gently fold one edge of the omelet over the vegetables. Let the omelet cook for another two minutes or until the cheese melts to your desired consistency. Slide the omelet out of the skillet and onto a plate. |
