FETA TOPPED GREEN TOMATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gonzales Estate in Crandall, Texas in 1980.
Ingredients:
4 medium green tomatoes
3 tablespoons white wine vinegar
1 teaspoon dried oregano leaves
1 cup crumbled feta cheese
4 teaspoons olive oil
1/2 teaspoon freshly ground black pepper
Directions:
1. Cut each tomato into 1/2 thick slices then overlap slices slightly in shallow baking dish.
2. Sprinkle vinegar and crumble dried oregano leaves then top with feta cheese.
3. Drizzle with olive oil then place dish 5” under preheated broiler for 7 minutes.
4. Sprinkle with pepper and serve immediately.
