Feta Stuffed Portabello Caps

Ingredients:
4 portabello mushrooms
1/2 - 1 cup feta cheese, crumbled
2 tbsp oregano
balsamic vinegar
olive oil
Directions:
1. Remove stems from mushroom and place bottom up on cookie sheet covered with foil.
2. Fill the center of each cap with feta cheese
3. Add a sprinkle of oregano
4. Drizzle with olive oil and balsamic vinegar to taste
5. Bake in 400 degree oven until feta is softened (about 10 mins)
