Feta Stuffed Baby Portabella Mushrooms |

Super easy recipe for stuffed mushrooms. Stuffing ingredients are easily substituted for whatever you have on hand. Ingredients:
24 oz baby portabella mushrooms |
2 cups crumbled feta cheese |
1/4 cup finely chopped italian parsley |
1/2 cup crushed walnuts |
shredded parmesan cheese (the fresh shredded kind, not the powdered kind) |
Directions:
1. Clean mushrooms and remove stems 2. Hollow out the center of the mushrooms (allowing the mushrooms to fully dry will make this much easier!) 3. Preheat oven to 350 degrees. 4. Combine walnuts, Feta and parsley in a bowl, squeezing mixture together. 5. Lightly spray a glass baking dish with oil or baking spray. 6. Use a small spoon to fill the mushroom cap with the cheese mixture and place, flat side down, in the baking dish. 7. Sprinkle a pinch of grated parmesan on top of each mushroom cap. 8. Bake for 20 minute or until cheese is melted. 9. Can be served hot or cold. |
