Feta Chicken With Zucchini |

This is so healthy, delicious and easy! I've made it for several people who now make it all the time! And I almost always have all of the ingredients in in my house! *Inspired by Real Simple magazine Ingredients:
2 tbs evoo |
1 lemon |
4 bnls sknls chicken breasts |
1/4 tsp salt |
2 medium zucchini |
1/4 cup flat leaf parsley leaves chopped |
1/8 tsp pepper |
1/3 cup (2 oz) crumbled feta (i use one the garlic and herb version!) |
Directions:
1. Heat oven to 400. 2. Drizzle 1/2 Tbs EVOO in roasting pan. 3. Zest lemon, set aside. 4. Thinly slice lemon and place 1/2 the slices in the pan. 5. Place chicken on top of lemon slices and sprinkle with salt. 6. Slice zucchini in half lengthwise, then into 1/4 inch, half moons. 7. In a bowl, combine zucchini, parsley, pepper, and the remaining oil, lemon slices and salt and toss. 8. Spread zucchini mixture over and around the chicken and sprinkle with feta. 9. Roast 20-25 minutes. 10. Transfer to plates and sprinkle with lemon zest. 11. (You can eat the lemon slices, too, they're not bitter and cooked to perfection!) |
