1 (9 inch) unbaked pie shells |
3/4 lb feta cheese, crumbled |
1 cup light cream |
3 eggs |
1/2 teaspoon dried thyme |
1 teaspoon cornstarch |
1 dash pepper |
1 garlic clove, minced |
9 large pitted black olives |
7 large green olives |
1 roasted red pepper, cut into strips |
Directions:
1. Preheat oven to 425. 2. Prick pie crust well with a fork. 3. Place in freezer for 10 minutes. 4. Bake 10 minutes; cool. 5. Blend cheese with cream and eggs until smooth. 6. Add thyme, corn starch, and pepper. 7. Stir in garlic. 8. Pour into pie shell. 9. Bake 10 minutes. 10. Arrange olives over top. 11. Bake 25 minutes or until filling is set. 12. When filling is set top with red peppers. 13. serve warm. |
