Feta Baked With Tomato & Oregano |

Cooked feta keeps its shape but becomes lovely and spreadable. Serve with warm crusty bread to scoop up the sauce. Ingredients:
3 tablespoons olive oil |
2 garlic cloves, sliced |
1/2 teaspoon chili flakes |
2 (14 ounce) cans egg tomatoes, drained |
2 tablespoons oregano, leaves chopped |
14 ounces feta cheese, broken up into large chunks |
fresh ground black pepper |
salt, if desired, the feta may make this dish salty enough so be careful |
Directions:
1. Heat 3 tbsp oil in a pan, add the garlic and cook for a minute. 2. Add the chili and tomatoes and simmer for 25 minutes until thickened. Season and stir in the oregano. 3. Heat the oven to 400°F 4. Put the feta in an ovenproof dish, cover with sauce and bake for 20 minutes before serving. 5. Serve as a hot spread with crusty bread. |
