Feta Baked With Tomato & Oregano

Cooked feta keeps its shape but becomes lovely and spreadable. Serve with warm crusty bread to scoop up the sauce.
Ingredients:
3 tablespoons olive oil
2 garlic cloves, sliced
1/2 teaspoon chili flakes
2 (14 ounce) cans egg tomatoes, drained
2 tablespoons oregano, leaves chopped
14 ounces feta cheese, broken up into large chunks
fresh ground black pepper
salt, if desired, the feta may make this dish salty enough so be careful
Directions:
1. Heat 3 tbsp oil in a pan, add the garlic and cook for a minute.
2. Add the chili and tomatoes and simmer for 25 minutes until thickened. Season and stir in the oregano.
3. Heat the oven to 400°F
4. Put the feta in an ovenproof dish, cover with sauce and bake for 20 minutes before serving.
5. Serve as a hot spread with crusty bread.
