A very elegant side dish! Ingredients:
1 1/2 lbs fresh asparagus |
1 medium red onion, sliced and separated into rings |
2 tablespoons olive oil |
1/4 cup crumbled feta cheese |
salt and pepper |
Directions:
1. Place asparagus in 1/2 inch water in lg skillet. 2. Bring to a boil. 3. Reduce heat, cover and simmer for 5 minutes. 4. In small skillet, saute onion in oil until crisp-tender. 5. Place asparagus on plate. 6. Top with onions and feta. 7. Season with salt and pepper to taste. |
