A tasty cream cheese and goat cheese spread that has colors that make it perfect for a holiday table, but it's great any time! Ingredients:
2 8oz packages cream cheese, softened |
1 8oz package goat cheese |
1t garlic powder |
1t dried dill weed |
2t fresh chives, snipped |
2t olive oil |
1/4 cup prepared pesto, drained |
1 jar roasted red peppers, drained and chopped |
Directions:
1. Line 1qt glass dish or loaf pan with plastic wrap. 2. Mix cheeses, garlic and dill until well combined. 3. Slowly add oil until blended. 4. Add chives and mix until just combined. 5. Spread 1/3 of cheese mixture in bottom of lined bowl/pan. 6. Cover that layer with pesto, then 1/2 of remaining cheese mixture. 7. Top that layer with peppers, then rest of cheese mixture. 8. Cover tightly with another layer of plastic wrap and chill well.(at least 3 hours) 9. *For serving, unmold cheese, remove plastic, and carefully smooth sides and top (was the bottom) for a better presentation. Serve with sesame or wheat crackers or toasted French bread slices* 10. ***for another variation, you can completely drain and finely chop a jar of green olives to replace the pesto and/or the roasted red pepper can be replaced with sun dried tomatoes in oil*** |
