I found this recipe on Obesity Help. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
12 ounces whole wheat penne rigate |
1 green bell pepper, chopped |
1 red bell pepper, chopped |
2 garlic cloves, minced |
2 tablespoons olive oil |
15 ounces red kidney beans, rinsed and drained |
1 teaspoon dried basil |
1 teaspoon dried chives |
1 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup parmesan cheese, grated |
1 1/2 cups fresh spinach, torn (3oz) |
Directions:
1. Prepare pasta according to package directions. Drain and set aside. 2. In a large skillet, sauté the bell peppers and garlic in the olive oil. Stir in beans and cooked pasta. Add basil, chives, salt and pepper; mix well. 3. Remove from heat and stir in the cheese. Add spinach and toss to coat. Serve warm Refrigerate any leftovers. |
