Festive Coconut Wild Rice with Cranberries and Pears

Ingredients:
1 cup wild rice
1 cup long-grain brown rice
3 3/4 cups so delicious® dairy free original coconut milk
1 cup dried cranberries
1 pear, diced
1/2 cup chopped pecans (optional)
Directions:
1. Rinse wild rice in cold water and drain thoroughly. Place wild rice and brown rice in a large saucepan with the coconut milk, and bring to a boil. Reduce heat and simmer until rice is tender and milk is absorbed, about 45 minutes. Transfer to a large bowl and fold in cranberries, pear, and nuts (if using).
