FESTIVE CARROTS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Daly Estate in Harrell, Texas in 1988.
Ingredients:
2 pounds carrots sliced 1/2
1 medium white onion sliced
1 green pepper diced
1 can tomato soup
1 teaspoon dry mustard
1/2 cup granulated sugar
1/2 cup white vinegar
1/2 cup salad oil
Directions:
1. Cook carrots until tender but firm then layer carrots, onions and pepper in deep bowl.
2. Put all other ingredients in a saucepan and bring to a boil then pour over vegetables.
3. Allow to stand in refrigerator overnight to meld flavors.
