Festive Black Bean Soup in the Crock Pot |

This is nice to come home to any time of the year. Ingredients:
1 lb dried black beans, soaked in water overnight and drained |
2 (10 ounce) cans diced tomatoes with green chilies |
1 medium onion, chopped |
1 green bell pepper, chopped |
1 tablespoon minced garlic |
14 1/2 ounces vegetable broth |
cajun seasoning |
Directions:
1. Place beans in slow cooker. Add other ingredients. Add water just to cover. 2. Cover. Cook on high 8 hours. 3. Mash some of the beans for a thicker consistency. If desired, garnish with fresh cilantro, and cheese or sour cream. Leftovers freeze well. |
