Festive Bean And Avocado Salad |

Beautiful salad! Different and delicious! Arrange lettuce on large platter, place sliced avocados on lettuce, then spoon bean salad over avocados. Ingredients:
2 (16 ounce ) cans kidney beans, drained |
1 (13 ounce) can garbanzo beans, drained |
1/4 cup sliced green onions |
salad dressing |
1/2 cup salad oil |
1/4 cup vinegar |
1/4 cup fresh lemon juice |
2 tablespoons sugar |
3/4 teaspoon chili powder |
1/2 teaspoon salt |
1/8 teaspoon garlic salt |
1/8 teaspoon pepper |
lettuce |
fresh cilantro |
3-4 avocados, halved lengthwise, seeded and sliced |
dip the avocado slices in a little fresh lemon juice |
Directions:
1. In a bowl, toss the beans and onions together 2. In another bowl, mix oil, vinegar, lemon juice, sugar, chili powder, salt, garlic salt and pepper 3. Pour over the beans 4. Chill 5. When ready to serve, arrange lettuce on platter 6. Prepare avocados 7. Place avocados on lettuce 8. Spoon bean salad over avocados 9. Sprinkle with fresh cilantro 10. Beautiful salad! |
