I clipped this unusual recipe from a newspaper several years ago. I recently made it for the first time and found it tasty and addictive. Serve it over cooked white rice. If you need to feed less people, reduce the sausage to 1 pound and keep the remaining quantities the same as shown. Ingredients:
2 lbs kielbasa or 2 lbs smoked sausage, sliced |
1 (20 ounce) can pineapple chunks in juice, drained and juice reserved |
1 cup reserved pineapple juice |
1/4 cup lemon juice |
3 tablespoons cornstarch |
1/2 cup brown sugar |
1/4 teaspoon salt |
1 large green pepper, cut into chunks |
1 large onion, cut into chunks |
1/2 cup maraschino cherry, drained (yes, really) |
Directions:
1. Combine juices, brown sugar and cornstarch. Boil until thick. Stir in salt. 2. Spray the crock pot with non-stick cooking spray. 3. Put sausage, fruit and veggies in the crock pot, add the juice mixture. 4. Cook on low 4 hours. |
