From Lean Beach Cuisine - A Collection of Healthy Coastal Recipes by Jewel Cammarano. Creating fried flavors with oven-baked foods is easy with vegetable cooking spray. Simply coat the food with selected coating and spray the surface with cooking spray then bake as directed. This hastens the cooking time, causing the coating to shrink around the food, seal in moisture and crisp the outside. Ingredients:
1 lb fresh mild white fish, cooked (grouper, flounder, redfish, sea bass, snook or other) |
1 small onion, finely minced |
1/4 cup combined red and green bell pepper, finely minced |
1 egg, beaten |
2 tablespoons whole mayonnaise |
1 tablespoon fresh lemon juice |
1 teaspoon lemon zest |
1 teaspoon cajun seasoning (or more to taste) |
1 teaspoon sherry pepper sauce (outerbridge's) or 1 teaspoon worcestershire sauce |
1/2 cup seasoned bread crumbs |
2 tablespoons chopped fresh parsley |
salt and pepper |
Directions:
1. Cut cooked fish into pieces and place in a food processor. Process quickly to shred and place shredded fish into a large bowl. 2. Add onion, bell peppers, egg, mayonnaise, lemon juice and zest; toss gently to blend. Season with Cajun seasoning, Outerbridge's or Worcestershire sauce, seasoned breadcrumbs and parsley and toss once more. 3. Add salt and pepper to taste. 4. Form mixture into 8 patties and place on a foil-lined baking pan. (Fish patties may be refrigerated at this point). 5. When ready to cook, preheat oven to 400 degrees F. Spray patties with vegetable cooking spray and bake for 15 minutes or until browned. 6. These are great served with lemon slices and your favorite tartar sauce. |
