Ingredients:
1/4 cup marinated green olives, pitted and torn into pieces |
1 (14-ounce) package coleslaw mix |
1/2 fennel bulb, thinly sliced |
1/4 medium red onion, thinly sliced |
1 orange, peeled and segmented |
1 tablespoon chopped parsley |
3 tablespoons extra-virgin olive oil |
1 1/2 tablespoons fresh lemon juice |
1/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. In a large bowl, combine olives, coleslaw mix, fennel, red onion, orange segments, and parsley. Toss with olive oil and lemon juice. Season with salt and pepper; toss well. |
