1001 Low Fat Vegetarian. Serve on burgers. Ingredients:
1/3 cup thinly sliced fennel bulb |
1/3 cup thinly sliced green onion |
1 -1 1/2 tablespoon olive oil |
1 -1 1/2 tablespoon balsamic vinegar |
1/4 cup crumbled goat cheese |
1/4 cup pitted green olives, sliced |
salt and pepper |
Directions:
1. Mix fennel, onions, oil and vinegar; add goat cheese and olives and toss. 2. Season to taste with salt and pepper. Refrigerate until serving time. |
