Incredible and unique salad bursting with wonderful flavors. We love it and hope you do too. Ingredients:
4 baby fennel bulbs quartered |
2 red onions cut into eight pieces |
4 plum tomatoes halved |
3 tablespoons olive oil |
2 tablespoons oregano leaves |
salad greens |
1 cup small olives |
3 tablespoons apple cider vinegar |
2 teaspoons dijon mustard |
2 tablespoons olive oil |
1 garlic clove crushed |
Directions:
1. Preheat oven to 400 2. Place fennel, onions and tomatoes in a baking dish 3. Heat oil in a small saucepan over low heat 4. Add oregano to pan and heat for 3 minutes 5. Pour oil over vegetables and bake for 30 minutes 6. To make dressing whisk together vinegar, mustard, oil and garlic 7. Place vegetables on bed of salad greens on serving plates then sprinkle with olives and dressing |
