Feel Better Instantly Chicken Soup

Ingredients:
1 lb carrot, sliced into 1/2-inch coins
5 stalks celery, chopped 1/2-inch thick
1 large onion, chopped
5 lbs chicken
2 tablespoons chopped parsley
salt, to taste
pepper, to taste
Directions:
1. In a large pot, place carrots, celery, onion, and chicken (backbone-side up). Add water to cover.
2. Bring to a boil, then reduce to a simmer, and cook partially covered until chicken is done, about one hour. Skim off foam and discard.
3. Remove chicken from pot and allow to cool. Remove meat from bones and shred into bite-sized pieces. Add chicken pieces back into the pot. Cook until heated through. Season with salt and pepper and garnish with parsley.
