These delicious pancakes provide the cancer-fighting genistein of the soy and selenium of the eggs; and the protein, vitamin A, and potassium of the yogurt. I love to serve these with prune and apricot whip. From Jane Kinderleher's book. Ingredients:
2 eggs |
1/2 cups plain nonfat yogurt |
1 tablespoon olive oil |
1 cup whole wheat flour |
1/4 cup soy flour |
2 tablespoons wheat bran |
1 teaspoon baking powder |
12 teaspoon baking soda |
Directions:
1. Combine all ingredients in blender or food processor and process only until batter is smooth. Lightly oil a hot griddle or skillet. Pour abour 1/4 cup of batter for each griddle cake. When they get bubbly, turn them over and cook for about 2 minutes. |
