These are so light they don't seem like you're eating bran!! What a tasty way to get your daily dose of fiber! Variations: Add dates, raisins, nuts, or blueberries. Sprinkle cinnamon and sugar on top. Batter will keep in refrigerator 6 weeks if covered. Quantity of muffins is an estimate. Quantity will change depending upon variation. Ingredients:
1 cup 100% bran (nabisco) |
1 cup boiling water |
1/2 cup crisco |
1 1/2 cups white sugar |
2 eggs, beaten |
1 pint buttermilk |
2 1/2 cups flour |
2 1/2 teaspoons baking soda |
1/2 teaspoon salt |
2 cups all-bran cereal (kelloggs) |
Directions:
1. Preheat oven to 400 degrees. 2. Combine Nabisco 100% Bran and boiling water and let cool. 3. Cream Crisco and sugar. 4. Add eggs, buttermilk, flour, soda, and salt. 5. Fold in Kellogg’s All Bran. 6. Fill muffin tins half full and bake 15 minutes. |
