Our neighbor, a retired college librarian, made the best brownies. She passed along the recipe to me in high school so that our family could continue to enjoy them. Ingredients:
1 cup butter |
2 tablespoons butter |
5 ounces baking chocolate |
6 eggs |
3 cups sugar |
3/4 teaspoon salt |
1 1/2 teaspoons vanilla extract |
1 1/2 cups flour |
1 cup pecans, broken coursely |
Directions:
1. Preheat oven to 325 degree F. 2. Lightly grease an 8 x 11-inch baking pan. 3. Melt the chocolate and butter in top of a double boiler; cool. 4. Beat eggs lightly. 5. Add sugar, salt, and vanilla extract; mix well. 6. Slowly incorporate the chocolate/butter mixture; mix well. 7. Gently mix the pecans in the flour. 8. Add flour mixture; fold together enough only to mix well. 9. Pour into prepared pan. 10. Bake for 50 minutes or until a toothpick inserted in the center comes out mostly clean. 11. Cut into squares while warm. |
