MAKES A GREAT COVERED DISH FOR CAMPING OR CHURCH POT LUCK Ingredients:
6 md diced zucchini, 6 cups |
4 tb melted butter divided |
2 md diced tomatoes |
1 c 4oz shredded cheddar |
1 c cubed velveeta |
1 c soft bread crumbs |
2 beaten eggs |
2 tb dried minced onion |
1 tb dried parsley |
1 ts dried basil |
1/2 ts cavenders |
1/2 ts garlic powder |
1/2 ts salt |
1/2 ts pepper |
Directions:
1. SAUTE ZUCCHINI IN 2 TB BUTTER UNTIL CRISP-TENDER; DRAIN WELL. IN A BOWL, COMBINE THE REMAINING INGREDIENTS. STIR IN THE ZUCCHINI AND REMAINING BUTTER. TRANSFER TO AN UNGREASED 2-QT BAKING DISH. BAKE, UNCOVERED, AT 350 FOR 25-30 MINUTES OR UNTIL BUBBLY. LET STAND 10 MINUTES BEFORE SERVING. |
