My friend from PEI gave this recipe 40 years ago. Nothing bettter on hamburgers & hotdogs Ingredients:
4 cups cucumbers, peeled and seeded |
4 cups onions |
1 medium cauliflower |
2 red peppers |
1 head celery |
2 green peppers |
8 large apples, grated |
3/4 cup salt |
5 cups boiling water |
6 cups vinegar |
6 cups granulated sugar |
2 tablespoons mustard seeds |
2 tablespoons celery seeds |
3 tablespoons turmeric |
3 tablespoons cornstarch |
Directions:
1. Coarsely chop all vegetables. 2. Cover with salt and boiling water; let stand 3 hours. 3. Drain and rinse. 4. To make pickling liquid, combine remaining ingredients in large stockpot, bring to a boil, add vegetables, return to boiling point, reduce heat and simmer for 20 minutes. 5. Pour in hot sterilized jars and seal at once. 6. Makes app. 12 (1 pint) jars. 7. Chop vegetables in the food processor using Pulse mode. |
