I love Tabbouleh and I like this recipe the best. It's not puritan but I like more bulghur in it than the more authentically Lebanese recipes. Very healthy, keeps well and tastes great on its own or as a side to grilled meats or veg. Ingredients:
3/4 cup bulghur (up to 1 cup if you prefer) |
1-1/4 cups boiling water |
1/4 cup olive oil |
1/4 cup fresh lemon juice |
3/4 cup chopped green onions, or 1/2 cup finely chopped yellow onion |
3/4 cup chopped fresh parsley |
3 tablespoons chopped fresh mint |
2 large or 3 smaller tomatoes, chopped |
1 medium cucumber - peeled, seeded and chopped |
3/4 teaspoon salt |
ground black pepper to taste |
Directions:
1. Pour boiling water over bulghur in a large bowl. Stir well, cover and leave to soak for 1 hour. 2. Drain bulghur and return to bowl. 3. Add all other ingredients and stir well. 4. Cover and chill for 2-3 hours before serving. |
