My favorite strawberry cake, I don't use any nuts as I think it takes away from the flavor of this great cake. It's very moist with a great frosting. Sometimes I bake it in two sqare pans instead of 1, 9 x 13 pan. Ingredients:
4 eggs |
1 cup sugar |
1 stick butter melted |
1 tsp vanilla or strawberry extract |
2 cups flour |
2 tsp baking powder |
1 tsp baking soda |
1/2 tsp salt |
2 cups sliced fresh strawberries |
3/4 cup chopped nuts ( optional ) |
strawberry frosting |
3 tbs butter softened |
4 oz cream cheese |
3 to 3 1/2 cups powder sugar |
1 cup mashed fresh strawberries |
Directions:
1. Beat eggs with sugar until light and fluffy beat in butter and vanilla until well mixed. 2. Combine dry ingredients and add to creamed mixture and beat for 2 minutes. 3. Blend in berries and fold in nuts if using. 4. Pour into a greased and floured 9 x 13 pan. 5. Bake in a preheated 350F oven about 30 minutes or tested done. 6. Cool completely. 7. For frosting: combine butter and cream cheese and beat smooth. 8. Add 3 cups of powder sugar to make a frosting. 9. Stir in berries. add more powder sugar to get frosting consistency. 10. Spread over cooled cake 11. Chill until firm. |
