From Luscious Lemon Desserts This is just wonderful, uses about 2 lemons depending on size Ingredients:
3/4 c sugar |
1/4 c cornstarch |
2 1/2 c milk |
3 large egg yolks, lightly beaten |
2 tbl finely grated lemon zest |
pinch of salt |
1/2 c lemon juice |
2 tbl unsalted butter, room temperature |
Directions:
1. Whisk together the sugar and cornstarch in a medium saucepan 2. Add the milk and whisk until smooth 3. Add the egg yolks, zest and salt and cook over medium heat, stirring frequently at first and toward the end constantly until thickened. 4. ( I would suggest a double boiler or put the pot into a larger pot of simmering water) 5. Remove pan from heat and stir in the lemon juice and the butter. 6. Strain, if necessary and pour into 4 individual serving dishes 7. Let cool to room temperature 8. Refrigerate, loosely covered until completely chilled and set, about 2 hours 9. Keeps up to 3 days |
