Great muffin recipe that makes a large batch and keeps for several weeks in the refrigerator. Tastes great too.
Ingredients:
2 cups raisins
5 teaspoons baking soda
1 1/2 cups boiling water
1 cup butter, softened
1/2 cup oil
4 eggs
2 cups sugar
1 cup applesauce
2 cups quick-cooking oats
4 cups kellogg's brand bud cereal
5 cups flour
1 teaspoon cinnamon
2 teaspoons salt
1 quart buttermilk
1/2 cup chopped walnuts
Directions:
1. In a VERY LARGE bowl mix raisins and baking soda. Add boiling water and mix. Cool slightly and add remaining ingredients. Mix. Fill greased or paper lined muffin tins 1/2 to 3/4 full.
2. Bake at 350 for 20-25 minutes. Makes 50+ muffins.
3. NOTE: Batter may be kept covered in refrigerator for several weeks. (Mine doesn't last several weeks).
