Great muffin recipe that makes a large batch and keeps for several weeks in the refrigerator. Tastes great too. Ingredients:
2 cups raisins |
5 teaspoons baking soda |
1 1/2 cups boiling water |
1 cup butter, softened |
1/2 cup oil |
4 eggs |
2 cups sugar |
1 cup applesauce |
2 cups quick-cooking oats |
4 cups kellogg's brand bud cereal |
5 cups flour |
1 teaspoon cinnamon |
2 teaspoons salt |
1 quart buttermilk |
1/2 cup chopped walnuts |
Directions:
1. In a VERY LARGE bowl mix raisins and baking soda. Add boiling water and mix. Cool slightly and add remaining ingredients. Mix. Fill greased or paper lined muffin tins 1/2 to 3/4 full. 2. Bake at 350 for 20-25 minutes. Makes 50+ muffins. 3. NOTE: Batter may be kept covered in refrigerator for several weeks. (Mine doesn't last several weeks). |
