Favorite Eggplant Casserole |

A yummy blend of flavors given to me by a friend. Bacon is optional to make this a vegetarian dish. Ingredients:
1 eggplant, medium sized |
4 slices bacon |
1/2 cup minced onion |
1/2 cup green pepper, chopped |
4 cups canned tomatoes, drained |
1 cup drained tomato juice |
1/2 cup celery, diced |
salt and pepper |
1 dash oregano |
1 cup mixed mushrooms |
1/2 cup parmesan cheese, grated |
Directions:
1. Wash, skin and cut up eggplant into cubes. 2. Mince bacon and heat in skillet. 3. Add onion and pepper and saute until bacon is done. 4. Add eggplant, tomatoes, juice and celery. Simmer until tender. 5. Put mixture in casserole dish and season with salt, pepper and a dash of oregano. 6. Fold in mushrooms and sprinkle parmesan cheese on top. 7. Bake at 350 degrees for 20 minutes. |
