Fluffy, light, just sweet enough. Ingredients:
1 cup flour |
1 cup cornmeal |
1/4 cup sugar |
4 teaspoons baking powder |
1 teaspoon salt |
1 1/4 cups milk |
2 eggs |
1/4 cup vegetable oil |
Directions:
1. In bowl, combine first 5 ingredients. 2. Add milk, eggs, and oil. 3. Beat for 1 minute. 4. Pour into greased (or paper lined) muffin tins. 5. Bake at 400* for 20-25 minutes. |
