This is a very old recipe that we love at Christmas. These little dainties are full of dates, cherries, golden raisins, pineapple, and pecans. They are full of flavor!
Ingredients:
1 cup shortening
1 box (16 ounces) light brown sugar
2 eggs
3-1/2 cups flour
1 teaspoon soda
1 teaspoon salt
1/2 cup buttermilk
1 pound chopped dates
2 cups chopped candied cherries
4 slices candied pineapple, cut into small pieces
1 cup white raisins (i have trouble finding white raisins, usually use golden, but can use dark)
* retain small amount of flour to coat fruit and nuts, before adding
Directions:
1. In mixer bowl, cream shortening and sugar
2. Add eggs
3. Sift dry ingredients together
4. Add dry ingredients to shortening, sugar, eggs, alternately with buttermilk
5. Add all fruits, pecans
6. Mix well (folding all in thoroughly)
7. Chill dough
8. Drop by small tablespoon onto *greased* cookie sheet
9. Bake for about 10 minutes in 375 degree oven
10. DELICIOUS WITH A CUPPA STEAMIN' HOT COFFEE! :)
