In order to decrease the carb count, I have been hiding cauliflower in my mashed potatoes. Over time I've steadilly decreased the potato content and increased the cauliflower and no one has said anything yet. Ingredients:
2 lbs cauliflower |
2 potatoes |
3 tablespoons butter |
1 pinch salt |
1 pinch pepper |
2 tablespoons mayonnaise |
Directions:
1. Cook potatoes until potato slides off fork when pierced. 2. Cook cauliflower until soft. 3. Use an electric mixer or hand masher and mash all ingrediants. |
