A cheap faux thai soup with chicken shrimp and ramen noodles Ingredients:
broth |
1 stalk of lemon grass |
lime (juice, and zest) |
2 garlic cloves |
1 and 1/2 to 2 inch piece of ginger root |
1 cup chicken broth |
2 cups water |
1/2 a pound of shrimp (shells) |
2 spring onions |
1/4 of a orange pepper |
1 serrano or thai bird chili cut into quarters (i didn't seed the chili but you may want to) |
1 tablespoon of curry powder |
soup ingredients |
1 chicken breast cut into bite size pieces |
1/2 a pound of shrimp |
2 packets of ramen noodles (discard the packet) |
Directions:
1. Combine all of the broth ingredients bring to a boil and them simmer covered for 10 min. 2. Strain the broth return to the pot bring the broth back to a boil add the noodles and chicken cook another 2 to 3 min. 3. Add the shrimp cover and cook 30 to 40 seconds turn the heat off and let sit for 2 min 4. Serve with green onions, and sriracha if you're so inclined. |
