Faux Swedish Melt-in-your-mouth Pancakes |

These are very light and fluffy, a great variation for the pancake. This recipe was given to me by Bill, my brother, a fabulous cook. Try these with my blueberry compote, already listed. Enjoy! Ingredients:
4 large eggs |
2 cups sour cream |
1/4 cup cake flour |
3 tbsp. granulated sugar |
1/2 tsp baking soda |
1/2 tsp salt |
oil or nonstick cooking spray |
Directions:
1. In a mixing bowl or blender, lightly beat the eggs. 2. Add the remaining ingredients and combine thoroughly. 3. Heat griddle or flying pan, lightly greasing it with oil or cooking spray. 4. Drop the batter by small spoonfuls to make 2 1/2 inch pancakes. 5. When a few bubbles appear on top of the pancakes, turn them and cook until browned. |
