Whether you're just out of avocados or you're looking for a way to slim down this mexican favorite, you'll have to give this recipe a try sometime. I found this recipe in Pop It, Stir It, Fix It, Serve It. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
15 ounces very young baby peas, drained |
1/4 cup sour cream |
1/2 cup prepared salsa |
2 teaspoons bottled lime juice or 2 teaspoons lemon juice |
1/2 teaspoon onion powder |
1/2 teaspoon dried cilantro |
1/4 teaspoon salt |
1/4 teaspoon ground cumin |
1/4 teaspoon garlic powder |
1/8 teaspoon cayenne (optional) |
Directions:
1. In a small mixing bowl, mash the peas with a potato masher or fork, or process them with a hand blender or food processor. Don't overprocess; some texture is good. Add the remaining ingredients and stir until blended. 2. Consider serving with tortilla chips, canned sliced olives, sour cream, or shredded cheddar cheese. |
