Ingredients:
1 cup(s) cherry tomatoes
1/2 cup(s) chickpeas
1 cup(s) cucumber
1 tablespoon(s) fresh mint
1/4 cup(s) fresh parsley
1/2 cup(s) green pepper
1/2 cup(s) red pepper
1 whole(s) scallion
1 whole(s) whole wheat pita
Directions:
1. dice vegatables and halve tomatoes, chop herbs, rinse and drain chickpeas. Combine. Dress with red wine vinegar and olive oil. Season. Toast pita and break into small pieces; toss into salad and serve
