A very refreshing salad used in all the arabic mezze Ingredients:
11/2 lb. sliced and halved cucumber |
1/2 lb. tomatoes (chopped) |
1 toasted arabic bread (broken into approximately 1 inch pieces) |
1 crushed garlic clove |
2 onions (wedged) |
1/4 c. fresh parsley leaves |
1/2 head romaine lettuce (cut into bite-size pieces) |
1/4 c. fresh mint leaves |
2 tbsp. sumac |
4 tbsp. fresh squeezed lemon |
2 tb red viniguer |
3/4 c. olive oil |
1 tbsp. salt |
Directions:
1. Combine vegetables, bread and spices. 2. Add juice and olive oil. 3. You can toast the bread or fry it . |
