This looks delicious, I got this one out of the local newspaper. Ingredients:
2 whole wheat pita |
3 tsp olive oil |
1 large garlic clove |
6 cups romaine lettuce |
1 small english cucumber |
1 cup sliced green onions |
3/4 cup flat-leafed parsley |
1/4 cup mint leaves |
3 medium tomatoes, seeded and chopped |
1/4 cup olive oil |
1/4 cup lemon juice |
1 tsp lemon zest |
salt & pepper to taste |
1/8 tsp cinnamon |
Directions:
1. Preheat oven to to 375F. 2. Brush both sides of the pita with the 3 tsp olive oil. 3. Cut garlic clove in half and rub on the pita. 4. Cut into 1/2-inch strips. 5. Bake until lightly golden. 6. When cooled break into smaller pieces. 7. In a large bowl combine lettuce, cucumber, onions, parsley, mint and tomatoes. 8. In a small bowl wisk together oil, lemon juice, zest, salt, pepper and cinnamon. 9. Drizzle the dressing over salad and gently toss. 10. Sprinkle with the pita pieces and serve immediately. |
