This is a delicious salad we make in the middle east. Different people make it differently, but the basic ingredients are the same. This is my version, feel free to improvise. Ingredients:

3 loaves pita bread |
3 cucumbers ,medium size |
1/2 head lettuce ,medium size |
2 tbsp mint ,fresh and chopped |
3 tbsp parsely ,fresh and chopped |
spring onions, sliced (to taste) |
2 tomatoes ,medium size, diced |
2 tbsp lemon juice |
1/2 cup olive oil |
1 tbsp sumac |
salt and pepper |
1 tbsp pomegranate ,molasses |
Directions:
1. 1. Cut bread into small squares 1 cm and broil in a toaster or until crunchy to make croutons. You can also fry them in oil. 2. 2. Cut lettuce into thin strips. Slice cucumbers. 3. 3. Mix tomatoes, cucumber, lettuce, onions, fresh mint and parsely in a salad bowl. 4. 4. Mix salt, pepper, lemon juice, pomegranate molasses, sumac, and olive oil. Add to salad bowl. Sprinkle croutons on surface. Serve right away. |
