Fatoosh (Middle Eastern Bread Salad) |

As usual I eat at a restaurant then try to make the meal myself. Had this salad in Guelph yesterday at the Quebec Street Mall. Of course with out pita breads. It was marvelous. Ingredients:
3 pita breads |
1 lb romaine lettuce, torn into pieces |
3 green onions, white and green finely chopped |
1 cucumber, peeled, seeded and cubed |
4 roma tomatoes, cubed |
3/4 cup fresh parsley, chopped |
2 garlic cloves, minced |
1 tablespoon dried mint |
1/4 cup olive oil |
1/2 lemon, juice of, of a fresh |
1 teaspoon sumac (optional) |
salt, to taste |
Directions:
1. Toast the pita breads and with a scissors, cut into bite sized pieces. 2. Set aside. 3. Toss lettuce, green onion, cucumber, tomatoes, parsley, garlic and mint in a large mixing bowl. 4. Add lemon juice, olive oil and sumac. 5. Toss. 6. Add bread and then salt to taste. 7. Best if allowed to chill for a few hours before serving. 8. sumac is a maroonish colored middle eastern spice that can be found almost anywhere. It adds a nice color and flavor. 9. It's not necessary, but a very nice touch to this recipe. |
