Fat Rascals Potato Patties |

This is an all-time favorite snack at our house. I'd always made potato patties with any leftover mashed potatoes that I had, but when I came across Fat Rascals they sounded like a delicious variation. Ingredients:
1 cup mashed potatoes |
2 eggs, beaten |
1/2 cup milk |
2 cups (8 ounces) shredded american or cheddar cheese |
1/2 cup all-purpose flour |
1/4 teaspoon baking powder |
salt and pepper to taste |
oil for deep-fat frying |
Directions:
1. In a large bowl, combine the first seven ingredients. 2. in a saucepan or frying pan, heat 2 in. of oil to 375°. Drop batter by tablespoonfuls, 4 or 5 at a time, into hot oil. Fry 3-4 minutes or until golden brown. Serve immediately. 3. Yield: about 24 puffs. |
