I think I've mentioned my recent quest for fat-free and low-fat adaptations of my regular recipes...here's one I came up with about a half hour ago for lunch, and I think its a keeper. There is 0.5g of fat listed on the tuna can, so I guess technically it's not fat FREE, but close. Ingredients:
1 large can tuna, packed in water, drained |
1/2 red onion, diced |
1-2 tbs. sweet pickle relish |
1/4 to 1/2 cup fat-free plain yogurt, drained (you could use it undrained but your salad would be more watery. i buy large cartons and drain it through cheesecloth or paper-towel lining a sieve for at least overnight and keep it on hand as i don't care for watery anything....except some soups, of course.) |
1 tsp. lemon pepper |
salt and regular black pepper |
Directions:
1. Mix everything except the yogurt, adjust seasonings to taste, then mix in the yogurt until the desired consistency. I had this with whole wheat crackers (5), on a couple of romaine lettuce leaves, and I judge the whole meal came in under 200 calories! Yay! |
