this is a hearty soup and great on those cold, winter nights. i love to serve this up when my children have stuffy noses, it is just so great and heals colds well. Ingredients:
3 cups fat-free chicken broth |
1 tablespoon lime juice |
1/8 teaspoon ground cumin |
1/4 teaspoon ground turmeric |
1 teaspoon salt & pepper |
1/2 cup corn kernel |
3 tablespoons cilantro |
3 tablespoons jalapeno peppers |
36 inches corn tortillas |
Directions:
1. cut the tortillas into long, 1/2 inch wide strips, place them in the broiler until crisp, about 1 min per side. combine the stock with lime juice and spices in a saucepan and cook for 10 min over medium heat. divide the toasted tortilla strips, corn kernels and cilantro among 6 small bowls. pout the soup ontop. garnish with chopped jalapeno peppers if desired. serve immediately! |
